Rustic Apple Cake

Ingredients:
- Corn Flour - 50 gr
- Rice Flour - 50 gr
- Eggs - 4
- Coconut Sugar - 30 gr
- Baking Powder - 6 gr
- Apples, cored and thinly sliced - 300 gr
- Lemon Juice, optional - 15 ml
Steps:
- Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) baking dish with parchment paper or lightly grease it.
- Wash, core, and slice your apples into thin wedges. Place the slices in a bowl and drizzle them with lemon juice to prevent browning. Set aside.
- In a mixing bowl, beat the eggs for about 5 minutes until they triple in volume and become light and frothy.
- In a separate bowl, mix the rice flour, corn flour, baking powder, and coconut sugar (if using honey, add it to the egg mixture).
- Gradually add the dry ingredients to the egg mixture, folding gently to keep the batter airy.
- Pour half of the batter into the prepared dish, layer in half of the apple slices, and pour the remaining batter on top. Arrange the remaining apple slices in a pretty pattern on top of the batter for a rustic, charming look.
- Place in the oven and bake for 40 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
- Let the cake cool for a few minutes, then slice and serve. It’s delightful as is or with a dusting of powdered sugar!
