Plum Crumble Pie

Ingredients:

  • Blanched Almond Flour - 16 gr
  • Oat Flour - 16 gr
  • Rice Flour - 22 gr
  • Almond Flakes - 10 gr
  • Brown Sugar - 24 gr
  • Butter - 30 gr
  • Plums - 550 gr

Steps:

  1. Preheat your oven to 180°C (350°F). Grease and line an 8-inch (20 cm) round cake pan with parchment paper.
  2. Wash, pit, and slice the plums. Arrange the plum slices evenly in the bottom of the prepared cake pan.
  3. Bake the plums in the preheated oven for 10-15 minutes, or until they start to soften.
  4. While the plums are baking, prepare the crumble topping. In a medium bowl, combine the rice flour, oat flour, almond flour, and brown sugar. Cut the butter into small pieces and add it to the dry ingredients. Use your fingers or a pastry cutter to work the butter into the flour mixture until it resembles coarse crumbs. Stir in the almond flakes.
  5. After the plums have baked and softened, remove the pan from the oven. Evenly sprinkle the crumble topping over the partially baked plums.
  6. Return the pan to the oven and bake for an additional 20-25 minutes, or until the topping is golden brown and the plums are bubbling.
  7. Serve warm or at room temperature. Enjoy it plain or with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
