Healthy Oatmeal Banana Bread

Ingredients:

  • Quick-Cooking Oatmeal - 120 gr
  • Salt - 2 gr
  • Milk - 250 ml
  • Banana, ripe - 2
  • Eggs, room temperature - 2
  • Cocoa Powder - 25 gr
  • Baking Powder - 6 gr
  • Walnuts - 40 gr
  • Dark Chocolate - 70 gr

Steps:

  1. Preheat the oven to 350°F / 180°C and line a baking dish with parchment paper or lightly grease it.
  2. In a bowl, combine the oatmeal and salt, then pour in the hot milk. Let it sit for 10 minutes to soften.
  3. Meanwhile, mash the bananas in a separate bowl. Add the eggs and beat the mixture with a fork for about 5 minutes until combined.
  4. Stir the banana-egg mixture into the softened oatmeal.
  5. Sift the cocoa powder and baking powder into the batter and mix until smooth.
  6. Pour the batter into the prepared baking dish and evenly sprinkle the chopped nuts on top.
  7. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the banana bread to cool completely. Melt the dark chocolate and drizzle it over the top of the bread.
  9. Slice and enjoy your delicious Banana Bread from Oatmeal!
