Fresh Basil Pesto Sauce

Ingredients:

  • Unsalted Nuts - 35 gr
  • Parmesan cheese, freshly grated - 25 gr
  • Fresh Basil Leaves, loosely packed - 120 gr
  • Salt, or to taste - 3 gr
  • Garlic, finely minced - 2 cloves
  • Extra Virgin Olive Oil - 120 ml

Steps:

  1. Prepare all the ingredients before starting: grate the Parmesan cheese, chop the Garlic, wash and dry the Basil leaves, measure out the Nuts and Salt.
  2. In the bowl of a food processor or blender, add the nuts, grated Parmesan cheese, and Salt.
  3. Pulse the mixture until it forms medium-fine crumbs.
  4. Add the Garlic. Pile the Basil Leaves on top of the nut mixture. There's no need to pack them down—just loosely add them.
  5. Pour in the Olive Oil.
  6. Process or blend until the pesto is smooth and creamy. Scrape down the sides of the bowl as needed to ensure all ingredients are well incorporated.
  7. Taste the pesto and adjust seasoning, adding more salt or cheese as needed.
  8. Use the pesto immediately by tossing it with freshly cooked quinoa, green buckwheat, pasta or transfer it to a jar for storage.
