Cottage Cheese Thin Pie

Ingredients:
- Corn Flour - 200 gr
- Cottage Cheese - 275 gr
- Eggs - 3
- Greek Yogurt / Kefir - 330 ml
- Butter, melted - 50 gr
- Baking Powder - 6 gr
- Salt - 6 gr
- Scallions, chopped - 1 bunch
- Dill, chopped - 1 bunch
Steps:
- Preheat the oven to 350°F (180°C) and line up the baking sheet pan with parchment paper.
- Get ready all the ingredients: cottage cheese (1 1/4 cup), eggs (3), greek yogurt (1 ⅓ cup), butter (3 ½ tbsp), baking powder (1 tsp), salt (1 tsp) and scallions (bunch).
- In a mixing bowl, whisk eggs and salt.
- Then add to the egg mixture greek yogurt, cottage cheese and chilled butter, mix well.
- Mix GF flour with baking powder, and add it to the wet ingredients.
- Add to the batter scallions and dill, if using.
- Pour the batter into the prepared baking sheet pan and spread it evenly.
- Bake in the preheated oven for 45-50 minutes, or until the batter is set and is golden brown.
- Allow the pie to cool slightly before slicing and serving.
